4 ¾ cups unbleached bread flour (approx. 1 lb 8.5 oz) Whole Wheat: ½ cup whole wheat flour (approx. 2.8 oz) Yeast: 1 teaspoon instant yeast Liquid: 2 cups warm water (105-115°F) Oil: 1 ½ tablespoons olive oil

Place a pizza stone in the oven and preheat to 500°F (260°C) for at least 30 minutes. Dust a pizza peel with semolina or cornmeal and transfer your shaped dough onto it. Top with your sauce, garlic, capers, red pepper, Parmesan, and fresh mozzarella. Drizzle with olive oil. Carefully slide the pizza onto the preheated stone and bake for 10-15 minutes, or until the crust is golden and the cheese is bubbly and browned.
